I'm waiting for bug-eating to hit the mainstream. Grasshoppers, larvae, worms, etc. High-protein and sustainable! They seem to be catching on around here, though I haven't tried them yet and am not eager to do so. The Yelp reviews on the late-night taqueria are generally favorable. Other than that, it's still random pop-up restaurants, or nice restaurants that do a special meal, not on the main menu.

When culture, tradition and people get together, the amazing level of creativity and inspiration is beyond the horizon. We, the people passionate about food, when we see articles like this, it boosts our motivation and sparks our interest. We want to learn, try and create more. It makes us realize just how little we know, but at the same time, how the information we can get from others is amazing. This infuses with our own personal thinking and the creativity of our minds. It can be a spectacular symphony of flavors and tastes. "Gracias" much!
