I first learned about umami in graduate school, and have always remembered it. I actually visited the Umami Cafe in NY this past summer and wrote about it on my blog: http://nutritioulicious.wordpress.com/2009/09/08/the-fifth-taste/.

I agree that this is an important taste to consider. I really love savory flavors. I'm much more into umami than I am into sweet as a flavor. My sweet cravings are pretty random and not too often. It only makes sense that this would be a taste sensation for our taste buds. All of the others describe flavors that we desire or dislike in foods. It's about time that there's a word for these types of foods that have been a part of the culinary arts since cooking began.

First of all, few people are actually allergic to MSG - the reaction come from the fact that MSG is a neuerotoxin. not an allergen! That's your brain going haywire! The list of health problems associated with MSG is quite long. Umamai is just a new twist on it. Autolyzed yeast extract is another variation. In fact, free glutamates are listed under more than 30 different names so that consumers won't know they're eating it.

I'm all for natural umami, but, as someone who's been super allergic to MSG my whole life, this trend scares me.

Thanks for the post the information. This has been one of those concepts that I never fully understood (not sure I still do) but you took me one step closer. It's funny that the foods listed (from sardines to parmesan) don't really seem to have the same flavor but I think the word earthiness helped explain things. And increased satiety, I had always thought MSG decreased satiety, interesting these food decrease it.
