One thing that I didn't read about here in either of my colleagues books is pressure cooking. It's the greenest way to cook other than using a solar oven. You say to put a lid on but a pressure cooker is like having a super heavy duty lid. Lentil soup in less than 10 minutes at pressure? Amazing stuff. You can read more on my website at http://www.pressurecookingonine.com and my blog http://wwwpressurecooking.blogspot.com.

I am very into going green, and learning how to use a pressure cooker saves energy, time and money.

Great post Janet. I was in the bookstore yesterday and was quite surprised at the number of new "green" diet and cookbooks.
My co-author, Janice Bissex, and I recently featured Kate Geagan in our weekly Cooking with the Moms radio podcast. Her tips were terrific ... and we love her recipes especially her Tofu Cashew Stir Fry with Sugar Snap Peas. It was easy to make and our kids really liked it. Here's a link to our version of the recipe: http://tinyurl.com/pldrwq
